This week, The Weekly Beet reports from the kitchen of Babycakes, New York's tastiest and healthiest bakery. Mary Kent celebrates her birthday, blowing out the candles on one seriously delicious vegan cupcake.

When she found out she was allergic to dairy and wheat, Erin was no longer able to enjoy New York favorites like Magnolia Bakery, whose cookies and cakes are filled with white flour, white sugar, and lots of dairy. So, she set out to make a healthy cupcake that she could eat free of all allergens such as dairy, sugar, gluten, wheat, nut and egg, et voila, Babycakes was formed. We're super grateful for Erin's allergies because they lead her to create something wonderful that the rest of us can truly enjoy! Now, that's what we call unBEETable!
Here's why we couldn't eat just one cupcake for Mary Kent's birthday celebration. Babycakes' ingredients are:

It got our first place prize for sure! Tied for second place was the vanilla cupcake which was made of spelt flour with the vanilla cupcake which was made of garbanzo bean flour. The icing is so naturally sweet that it won't leave you with those sugar cravings like Betty Crocker does! Also, by using cold-pressed coconut oil, it definitely shows that Babycakes cares about your weight, cholesterol level, and immune system! We commend you, Erin, for a healthy job well done. Your cupcakes definitely have The Beet's stamp of approval!
